b. Easy Date Relish

As an avid salad eater; I require it to be tasty and healthy all at the same time. Dressing and relishes make food even better and to ensure all aspects of nutrition are covered I wanted to create something healthy to add to our family meals rather than packaged dressing with additives.   The b. Easy Date Relish can be made in 4 minutes and added to any breakfast (eggs) lunch or dinner.

I add this relish to salad, quiche, chicken, fish and anything else that requires relish and it is so easy to make and store.  It can also be added to a cheese platter for those special occasions.




Easy Date Relish


air tight jar with lid

12 x dates (fresh) de-seeded and diced

3 tablespoons of garlic infused oil

3 tablespoons of balsamic vinegar

3 tablespoons coconut water


salt and pepper


  1. Cut and dice all dates and parsley.
  2. Put the dates and parsley in jar.
  3. Pour garlic oil, coconut water, balsamic vinegar in jar.
  4. Add salt and pepper.
  5. Shake the jar.
  6. Store for up to 4 days in fridge in airtight jar.
