Capsicum Relish

My homemade easy capsicum relish is a sugar free way to add a delicious and nutritious dressing to any of your salads.

Ingredients

2 whole red capsicums – diced – take the seeds out

1 red onion- diced

2 garlic cloves- diced/crushed

rice bran oil- approx. 3 tablespoons

salt and pepper

Method

  • Cut them up into small pieces,
  • Place on baking paper all together on an oven tray.
  • Pour oil and salt and pepper over the vegetables
  • Bake in a moderate oven and for 40 minutes
  • Once baked and vegetables are soft and brown, remove from oven and allow to cool.
  • Blend it in a processor or using a blending stick until consistency is smooth but not soupy.
  • Place in an airtight container and use for 1 week only.
