This slice can be enjoyed hot or cold and is a delicious addition to any lunch box. I like to make it on the weekends ready for school lunches > but generally it is all gone by the time Monday comes around…


b.spinach and feta slice




 ¾ cup of LSA (or almond meal)

¾ cup of seeds (pumpkin seeds, sunflower seeds)

1 egg

3 tablespoons of Rice bran oil

salt and pepper



1 large piece of Danish feta > crumbled

1 whole bunch of silverbeet (spinach) > sliced

8 x eggs



  1. Combine all the base ingredients together and press into a lined tray and bake for 20 mins in a moderate oven until browning.
  2.  Beat the eggs add the sliced silver beet (spinach) and crumbled feta until it creates a creamy consistency in the bowl.
  3.  Pour the filling over base and bake in a moderate oven for 20mins.
  4.  Allow to cool and serve.
