After a luscious weekend around the pool – this was the ultimate tummy need.
Honey Sunflower Seed Salmon + Minted Mango Zing Salad
- fresh (middle section) salmon with skin on
- teaspoon sunflower seeds
- fresh mint bunch – handful chopped
- 1 fresh mango sliced and diced
- 1/2 cup grated carrot
- 1/2 cup grated beetroot
- 1 cup baby spinach
- 1/2 continental cucumber diced
Quinoa can be added to this salad if a longer lasting energy is required.
- BBQ the salmon – when cooked remove from bbq pour honey to glaze and sprinkle sunflower seeds.
- Combine all salad mix into one bowl and gently mix – pile onto plate and serve with warm salmon.
